Sweet Potato Fries!

I hesitated to count this as a new recipe because it’s so easy, but after giving it some thought (while I steamed some broccoli) I decided why wouldn’t I post it?  I never put a stipulation that the recipes I tried had to be complicated, require expensive ingredients or take hours of slaving away in the kitchen.  I just said they had to be new.  As in, recipes I’ve never made before.  And tonight when I made these fries for dinner, it was the first time I’ve ever made fries of any kind, so it totally counts. Besides, if you’re like me, you want to learn to cook things that are easy, cheap and healthy and this one fits the bill on all three.  So behold…I bring you a “how-to” on making the yummiest sweet potato fries!

Mmmmm, mmmmmm good! Fresh out of the oven and ready to eat!

{For some reason, the lighting in this photo makes these look like normal-potato fries, not sweet potato fries, but trust me, in real-life, they were a beautiful orange.}

Nashville Rock ‘n’ Roll Country Music Half Marathon

Besides a great deal of muscle soreness, I feel such a huge sense of accomplishment as I sit down to write this post.  I’ve been dreaming for months now about the day that I get to write this post….the one that I’m writing now about having checked #2 off my list…and now as I’m here, I’m sort of at a loss of what to write.  If you need a refresher, the goal was:

2. Run (complete) a 1/2 marathon

And yesterday I did just that.

At the start line! Excited and ready to run!

Foto Friday – Episode 16

Tomorrow is Bethany’s big 1/2 marathon event, so I selected today’s photo in honor of the two runners.  Best wishes guys!

May the road rise to meet you, may the wind be always at your back.

Strawberry Lemonade Ice Cream

The weather in Colorado has been perfect lately – just warm enough that all I want to do is sit outside and eat ice cream.  And what does this have to do with my 30×30 list?  Nothing, except that I’ve got to do something to counteract all this exercising and going to the dentist.

Swimming Upstream: Adding another “X” with a Salmon Dinner

As Mary-Hall and I started to realize that we need to turn up the heat on our lists in order to get everything done in time, I realized that we’re over 3 weeks into April and I haven’t cooked anything new yet this month! So last night I pulled out some of my cookbooks and started leafing through in search of a new recipe.

On page 149 of the cookbook above (which is a GREAT cookbook, I might add) I found one that was just what I was looking for.  Healthy, filling but not heavy, quick and simple, but something I wouldn’t have thought of putting together myself.  Read More…

Up in My Grill — #27 is DONE

Shame post here folks. Did you know that I haven’t been to the dentist in quite some time? Haven’t been since we moved to Colorado. When was that, you ask? Oh 2008ish.  i.e. 4.5 years since my last dental cleaning.

This is not my mouth but it could be if I don't start going to the dentist more regularly.

List of excuses:

  • I don’t really like going to the dentist.
  • I don’t like calling people on the phone.
  • Keeping up with my insurance information is a hassle.
  • I can’t be responsible in all areas of my life simultaneously.

That last one is the honest truth.  Am I the only one like that?  Read More…

A deadline is a deadline is a deadline

Last night as I was re-reading my post (I always do that after I post to make sure nothing is weird) I noticed off to the side where Mary-Hall has added a fun little feature tracking our deadlines.  And it looked like this.

Where has the time GONE!?
